Eat and Live Well: Menu suggestions

As promised I took a moment from cooking, teaching, travelling and social media to do a little old school investigation of my new building and the area it occupies (Hyde Park, Chicago, IL). And aren't you in a for a treat, so check back Thursday.

Until then, I promised more Eat and Live Well food posts, but I got carried away with my new Architectural project. However, if you are looking for menu ideas, here are a couple of the fancy things I cooked-up this weekend (If you would like the menu for any of these comment below):

  • Turkey sausage and shrimp Jambalaya w/roasted lemon potatoes and Jiffy cornbread. This was a southern menu from the stars. If you are allergic to carbs (medically or just one of those) then this meal you want to avoid like the plague. However, if you want a wholesome meal that is not too heavy, but filling this is for you. The combination may sounds a little off but the sweet and spicy Jambalaya sauce complimented the hint of lemon on the potatoes nicely. 


  • Turkey tacos and enchiladas w/Spanish rice and black beans. Living in Indonesia for nine months; perusing through London, then China for the past month made me crave one of my favorite foods -- Mexican. So for Labor Day instead of a BBQ, I had a Mexican day! The key to this menu is to use black beans instead of re-fried beans, fresh vegetables, wheat tortillas if possible; and no cheese. I did use about 2 tbsp. of sour cream in the turkey mixture but that was it. And it was so delicious! 
If you haven't noticed the common theme here is Turkey--I gave up beef 15 years ago, so all meat dishes are substituted with Turkey, Chicken, Seafood or Veggies. 

Also, don't forget to eat in small portions. The best way to do this is to eat on a dessert plate (in America, this is about the normal size plate in every other part of the world) -- this says a lot about our problem with obesity. Just saying.
